If you find yourself asking, what do I make for dinner? Why not try this out? This is something I made up and my family loves it. It’s almost a lighter chicken alfredo, maybe that was the inspiration more than everyone loves these ingredients!
In case you don’t have Instagram, here is the recipe, kind of, I don’t really measure. I just do what feels and tastes right!
Cut up 3-4 chicken breasts into bite sized pieces. Heat some olive oil in a pan on medium, add garlic to taste then add in the chicken. Season with basil and oregano. Turn burner up to medium high. Once the chicken looks a little done add one head of chopped broccoli, salt and pepper to taste. Sauté with the chicken until tender. Transfer to a bowl. In the same pan add more olive oil, garlic, and a half box (8oz) of penne pasta, toss to get all that olive oil and garlic on the noodles. Add one can of low sodium chicken broth, it should cover all the pasta, put a lid on the pan and let it simmer until the chicken broth has been absorbed and pasta is tender. Add some grated Parmesan (I only had shredded for this demo and the consistency was not great), then add the chicken and broccoli back in, add more cheese because… cheese. Serve and enjoy!
* I use low sodium chicken broth because I would rather add the salt myself!
