To continue my healthy-ish eating habits, I have been eating a lot of chicken. Grilled chicken, baked chicken, broiled chicken, all the chicken. Last night, chicken was on the menu again. I wanted to jazz it up. I opened the fridge and I had eggs, butter and Parmesan cheese. All low carb friendly. I made a little wash with the egg and a bit of butter, dipped it in the cheese, baked it for 20 minutes on 350 and bam- dinner was delicious!

Served it with a salad and again, even the Warren liked it and now I have a new chicken dish to add to the rotation. Yes, I wish it had cheese with some bread crumbs, but it got the job done for now.
