I was at it again last night cooking up a storm! I got creative and used a few ideas from some of you, so thank you!
I am trying new ideas with chicken, because no offense to chickens- it gets old real quick.
This time around I made BBQ Chicken with Pork Rind Crust. Sounds weirdish, but it was delight-ful!
Here's what I did. I bought boneless, skinless chicken thighs, made a wash of two eggs and a bit of butter. I ground up a bunch of BBQ Pork Rinds (carb free!) in another bowl. I dunked in the egg butter mix then the Pork Rinds, then I brushed on a sugar free BBQ sauce. The sauce was ok. I missed the real thing, but it got the job done. Then I popped those babies in the air fryer for 25 minutes- which is the chicken setting.
They were cooked perfectly and I was quite impressed with the dish!
