Sarah Kay Cooks: Stuffed Peppers

4 large bell peppers (any color)
1 to 2 pounds of ground beef
Chopped onion (to your liking)
1 cup of cooked rice
1 teaspoon of salt
1 clove of garlic (optional)
1 can of tomato sauce
1 bag of shredded mozzarella

Preheat over to 350 degrees.

Cut your peppers at the top and remove the seeds and insides. In a large-enough Dutch oven pan, add water to cover the peppers with water. Heat to boiling, add the peppers. Cook for about 2 minutes and then drain the water.

Cook the beef and onions. Drain, then add in the rice, salt, garlic and 1 cup of tomato sauce. Cook until hot.

Stuff the peppers with the beef. Stand the peppers up in an 8-inch square baking pan. Pour remain sauce over the peppers.

Cover the pan with foil and bake for 10 minutes. Then uncover and bake for 15 minutes. Set to broil, add cheese and leave in for just 2ish minutes to melt cheese.
