It's simple, it's easy, it's Red Beans and Rice. OK, I mean why not? I get it, it's not exotic, or sexy, or grill-able, but sometimes a dish like this goes down nicely and gives you comfort, and isn't a huge deal to make, or more importantly, clean up after.
I mean you're talking with a guy that has been waiting on a new dishwasher to be installed for the last few weeks, and they are finally getting it done today!
