Low Carb Chicken Lasagna

Ok, so maybe this weekend will be better for grilling- but I have a great recipe to share! Chicken lasagna. Low carb, cheesy and so good! Try it when fall returns or when it gets real cold out.

4 chicken breasts
large container of ricotta cheese
2 cups of mozzarella cheese
1 egg
1 jar of marinara sauce

In a bowl combine the ricotta cheese, the egg and a cup of mozzarella cheese. Stir together.

In a casserole dish- place the chicken breasts down. Scoop the cheese mixture on top of them- be generous. Then pour the sauce over top. Bake for 30-35 minutes at 350 degrees.

Once baked, top with the other cup of cheese and broil on high for 2-3 minutes or until golden brown.
