Something I try to do every week is Meatless Monday, a day where you don't eat meat. It's super simple, and there are multiple reasons people partake. One of the reasons I participate is to try non-meat based recipes. I went to Trader Joes this weekend and found something that sounded right up my ally: black truffle alfredo sauce. I decided to use this sauce to make a mushroom alfredo for Meatless Monday! Here's how that went!
I used a box of fettuccine, the alfredo sauce, sliced mushrooms, oyster mushrooms (for different textures and flavors), salt, pepper, butter, and extra virgin olive oil. While the pasta cooked to al dente, I sliced the mushrooms into bite-sized pieces, seasoned them with salt and pepper, and sauteed them in olive oil and butter. I had to dump some excess water out, but after I did that and they were nice and soft, I added the alfredo sauce. Ideally, you'd spoon the pasta straight from the pot into the pan, but I saved some pasta water before draining the fettucini, and added it all in the sauce. After a quick mix together, I plated the dish and topped it with parmesan cheese.
It wasn't the prettiest, but it tasted delicious. The butter and water kinda diluted the truffle flavor, but it was definitely still there, and not too strong. I had some iced chai made from the spiced chai concentrate I also got at Trader Joes.
